When you need a healthy meal that's quick, satisfying, and packed with nutrients, these salmon rice bowls are hard to beat. They combine protein-rich salmon, rice for lasting energy, fiber-rich vegetables, and healthy fats into one balanced meal that's perfect for lunch or dinner.

This is one of my favorite examples of what a balanced meal can look like. Instead of focusing on cutting out foods, I encourage women to build meals around protein first, then add nourishing carbohydrates, colorful vegetables, and healthy fats. Wild-Caught Salmon

Ingredients

  • 2 to 4 frozen wild-caught salmon fillets
  • Salt and black pepper
  • 1 cup jasmine or basmati rice
  • 2 cups shelled edamame
  • 1 to 2 cups thinly sliced cucumber
  • 1 to 2 cups finely shredded carrots
  • Nori seaweed, cut into 1-inch squares
  • Coconut aminos or low-sodium soy sauce (optional)

Method

  1. Defrost the salmon according to package directions.
  2. Season with salt and black pepper.
  3. Bake at 400°F for approximately 15 minutes, or according to package directions.
  4. Cook the rice according to package directions.
  5. Steam the edamame in a small amount of water for 8 to 10 minutes.
  6. Divide the rice among serving bowls.
  7. Top each bowl with: ½ salmon fillet, ¾ cup cooked rice, ½ cup edamame, ¼ cup shredded carrots, ¼ cup sliced cucumber, A sprinkle of chopped nori
  8. Drizzle with coconut aminos or low-sodium soy sauce if desired.
